Vegetarians and vegans are not the only ones who eat alternative protein sources. And although tofu originated in China and is widely consumed there, it is an international food item that has been around some 2,000 years. Legend says it was discovered by a Chinese man who accidentally curdled soy milk with nigari seaweed. In 2018, the global tofu market was estimated to be worth USD 2.31 billion. It is expected to grow 5.2% by 2025. A major driving factor is the fact that people want to decrease their consumption of meat and animal slaughter. It is a high protein alternative to eating meat or dairy and is consumed by many people with dietary restrictions and preferences. Tofu can be prepared in many ways and used in several dishes. One favorite way is frying the tofu to get a crispy outer layer and the soft delicious inside. You can also try baking and roasting the tofu for similar crispiness. 

Carrots are also an amazing veggie! Besides being healthy they provide you with good eye health. They are also a good source of beta carotene, fiber, and potassium. A cup of carrots has a little over 2 grams of fiber, which means eating carrots or drinking carrot juice helps you feel fuller longer. They also pair up well with several dishes like salads, stir-fries, soups, or just as a side dish to your favorite piece of protein.

 7 oz tofu, cut into ¼ inch thickness
 1 tbsp coconut oil
 1 tsp chili flakes
 salt and ground black pepper to taste
 ½ tsp dried oregano
 3 medium-sized carrots, peeled and diced in circles
 ¼ cup vegetable broth

In a small frying pan add the coconut oil and warm it up on medium heat.

Start frying up the sliced tofu on both sides for about 2-3 minutes.

Set aside the cooked tofu slices, and start sautéing your carrots.

Season them with salt and ground black pepper to taste, dried oregano and chili flakes, and cook for about 7-10 minutes with the vegetable broth.

Serve and enjoy.
