Keto Oatmeal Recipe

Oatmeal is one of those foods that is a fiber-filled, satisfying and healthy addition to any diet.  Except for the Keto diet.  But, oatmeal lovers can rejoice with this quick keto oatmeal recipe.  It is packed with superfoods like chia seeds and coconut flakes and made rich and decadent with creamy almond milk. Macadamia nut milk is another great alternative to finish this off as a keto-vegan delight, and you can throw a few berries on top for a juicy burst of color and freshness.  Fun fact: blackberries contain the lowest carb count in the berry community, and offer a plethora of vitamins and antioxidants.

2 tbsp chia seeds
2 tbsp ground flax seeds
2 tbsp coconut flakes
1 tbsp stevia
½ cup warm water
½ cup almond milk

In a large mixing bowl add the ground flaxseeds, chia seeds, coconut flakes, stevia, and warm water.

Mix until thick paste forms and then stir in the almond milk.

Serve the keto oatmeal in a jar or glass and enjoy.
