Acai is one of the original “superfruits” that we just discovered in the USA relatively recently, but it has been growing in Brazil and the Amazonian regions of South America for hundreds of years. It has very low sugar content for a fruit, yet packs a plentiful punch of antioxidants. Acai berries are usually pulped and sold frozen, where they can be thawed and blended into the beloved acai bowl.
You may have an acai bowl recipe of your own, but we encourage you to give ours a try. We load it up with nutrient-dense pumpkin seeds and peanut butter and give it a creamy texture by adding plant-based almond milk. Two ingredients that must accompany any good acai bowl are two of our favorite superfoods: chia seeds and coconut flakes. If you have access to fresh strawberries and mint (very easy to grow at home!), swirl them in at the end for a sweet, tangy refreshingly minty finish.
In a high-speed blender add in the acai berries, strawberries, almond milk, and peanut butter.
Blitz until smooth and combined.
Pour the mixture into a serving bowl and arrange it with pumpkin seeds, coconut flakes, chia seeds, and fresh strawberries.
Decorate the whole plate with fresh sprigs of mint.
Enjoy.
