Imagine a homemade falafel, but healthier, tastier, and even prettier.  We present to you one of our favorite Dish Kitch snacks, which also serve as a superfood side dish – Broccoli Balls with Flax Seeds. These little balls of perfection are gluten-free, ketogenic, and easily made vegan by omitting the egg. If you do omit the egg, simply whisk three tablespoons of water with a tablespoon of flax seeds, and let the mixture sit until it becomes gelatinous.

Flax seeds are rich in cancer-fighting, heart-healthy nutrients, and are a vegan source of protein and omega 3 fatty acids.  

We all know broccoli is a nutrient powerhouse, but it’s not always easy to eat as much as we probably should. This recipe makes it easy to fight cancer, prolong life span, increase bone density, and promote regularity, one broccoli bite at a time.

 1 ½ cups broccoli, chopped
 1 spring onion, diced
 1 pepper, diced
 1 large egg
 2 tbsp olive oil
 1 cup ground flaxseed
 2 garlic cloves, minced
 salt and ground black pepper, to taste
 1 tsp baking powder

In a bowl add the chopped broccoli, diced onion, diced pepper, egg olive oil, and minced garlic.

Mix until combined and stir in the ground flaxseed and season with salt and pepper to taste.

With the help of an ice cream scoop, scoop out from the batter and form the broccoli patties in a baking pan lined with parchment paper.

Bake in a preheated oven at 350 F or 180 C degrees for about 15-17 minutes.

Let them cool slightly and serve.
