Healthy and delicious go hand in hand in the Dish Kitch—even when it comes to desserts. Three ingredients that we can’t get enough of are avocados, coconut, and dark chocolate; combining all three to create these gluten-free cookies was a no brainer.
The avocado is one of nature’s perfect creations, packed with heart-healthy monounsaturated fatty acids, fiber, and a plethora of vitamins and nutrients.
Another delicious powerhouse of health, the coconut boosts heart health, immunity, and may even make you smarter!
The more we learn about dark chocolate, the more we understand why it makes us feel so good. Packing in almost a full daily allowance of iron and magnesium per serving, it also contains a healthy amount of energy-boosting natural caffeine. Lily’s stevia-sweetened dark chocolate are a great choice to make these gluten-free cookies also ketogenic.
In a bowl add the avocado and mush it up with the help of a fork.
Add in the sugar, vanilla extract, and crack in the egg.
Mix until combined and stir in the melted dark chocolate, cocoa powder, coconut flour, and baking soda.
Mix until combined and be careful not to overmix the batter.
With the help of an ice cream scoop, scoop out from the batter and arrange the cookies in a cookie sheet lined with parchment paper.
With the help of a fork that is dusted with little bit coconut flour, press the cookies down to flatten them and bake them in preheated oven at 350 F or 180 C degrees for about 12-15 minutes.
Let them cool slightly and serve.
